Within days of my arrival in Seattle, I happened upon this article and decided I needed to explore Seattle via waffle. Although I haven’t yet had an opportunity to taste any of these enticing breakfast spots, I plan on trying Sweet Iron‘s Liege style waffles very soon. I was introduced to Liege style waffles at Off the Waffle–which I actually thought was called “Awful Waffle”–in Eugene, OR last Spring Break and have been dying for a second taste.

To satisfy my waffle craving in the mean time, I plan on making my own waffles at home. In order to improve the nutrition without compromising taste, my waffles will be gluten free. Although I do not follow a specifically gluten free diet, I have several friends who do, celiacs and gluten-tolerants alike, and am aware of many health benefits of doing so (predominantly, for me, reducing consumption of processed foods). I found a simple yet nutritious recipe for gluten free waffles here and plan on adding the nutrients of seasonal fruit for an added health taste benefit. Now the only choice is pumpkin or apple cinnamon?
